Ingredients

  • Makhana – 3 cups
  • Turmeric powder
  • Red chilli powder
  • Black pepper
  • Salt
  • Chat masala
  • Vegetable oil or ghee

Method 

  • Heat the ghee or vegetable oil in a saucepan and roast the nuts for 8-10 minutes on low flame of heat. Keep stirring it. 
  • Add all the spices mentioned above. Turn off the flame and sicard the nuts well. 
  • Mix all the spices well. 
  • Place immediately in the air tight container and cool it for sometime. 

NOTE- if you want to skip ghee or vegetable oil you can do it. But spices don’t mix well until & unless you don’t put ghee or oil in it. 

2. Caramelized makhana 

For easy and quick treat caramelized makhana is best. Let’s see the recipe. 

Ingredients 

  • Makhana- 2 cups
  • Jaggery 
  • Ghee or coconut oil 

Method 

  • Roast the makhana in ghee or coconut oil over a low flame of heat until they become crisp. 
  • In another saucepan keep some water and jaggery to boil on low flame of heat. It will melt into a golden brown liquid and after some time check for the sticky consistency. 
  • Stir constantly for the melted jaggery on roasted makhana. 
  • After sometimes jaggery will sit down on makhana and place them in an airtight container. 
  • This is a good snack you can have anytime. The crisp of makhna and sweet taste make you wish to have more. 

3. Healthy makhana chaat 

Flavoured makhanas are almost everyone’s favorite. Let’s see how it can be ready. 

Ingredients 

  • Makhana 
  • Potatoes
  • Yogurt- 1 cup
  • Pomegranate- ½ cups
  • Raisins 
  • Lemon juice (optional) 
  • Black pepper
  • Coriander leaves
  • Salt 

Method 

  • Soak the makhana in water for 30 minutes, after 30 minutes squeeze all the water from it and put it in a bowl. 
  • Add all the ingredients in it and mix them well. 
  • Add raisins in the end. You makhana chaat is ready. 

This healthy makhana chaat is ready in less than 15 minutes and to add  more taste to it add cucumber to the mixture. You can also add sev instead of raisins. You can have it at breakfast or at snack time. 

4. Makhana matar curry

It is a unique dish, unlike the other curies you have tasted till now.  It’s light and fantastic and is delicious to eat. 

Ingredients 

  • Makhana 
  • Peas
  • Onion
  • Turmeric
  • Coriander powder
  • Red chilli powder 
  • Garam masala 
  • Ginger
  • Garlic
  • Salt
  • Cashewenuts 

Method 

  • Put the makhana in a saucepan and roast them on low flame of heat until crisp. Transfer the makhana to another bowl and keep it aside. 
  • Heat the oil or ghee in a pan and put half onions and garlic until a little brown. Turn off the flame and add cashews. Cool it down for sometime and then grind the mixture. 
  • Heat some ghee or oil in the pan and add some season seeds. Add the leftover onions to the pan and fry them and the onion paste to the mold. 
  • Add tomato puree, turmeric, coriander powder, red chilli powder and garam masala and mix them well. Cover the pan and let the oil dissolve. 
  • Add a half cup of water and peas to it. Cover the pan and simmer it for 4-5 m minutes. 
  • Put the roasted makhana and simmer it for 5 minutes. Your recipe is ready. 

5. Makhana tikki 

You must be surprised after hearing this name. Now let’s see the recipe. 

Ingredients 

  • 4 medium potatoes- cooked and mashed 
  • Makhana – 1 cup 
  • Green pepper- fine;ly chopped
  • Coriander leaves – finely chopped 
  • Fennel seed powder 
  • Grilled peanuts – 2 tablespoon 
  • Chaat masala 
  • Garam masala 
  • Ghee or vegetable oil 
  • Salt

Method 

  • Put ghee or vegetable oil in a pan and makhana and roast them well until they are crisp. 
  • Put the roasted makhana, mashed potatoes and all the other ingredients and mix them well. 
  • Form the mixture in a round shape. Saute them in a pan until they are light brown. 
  • Serve with ketchup or pudina chutney.
