Farmers need to dive in water and reach to the bottom. They took out seeds from hands as they made sure machines don’t damage them. They collect the seeds on the base of a bamboo pole which is later drawn out from the surface to retrieve makhana. 

STEP 2: Cleaning 

One might assume that cleaning of these seeds needs some machines. However, this process is done in a traditional method to preserve the integrity of seeds. These seeds are placed in concave containers called gaanja. They are dipped in water to remove any dirt present on the surface. 

Then they are placed in a tight container and rolled to make the surface smooth and give it a perfect shine. Then, raw makhanas are spread over a mat under the sun to dry for a few hours. And this process is done continuously for several times. 

STEP 3: Sorting or Grading 

Since all the seeds are in different shapes and sizes, this will make it hard to fry or roast them later. For this reason, they are passed through a series of sieving devices. This process is repeated many times to get the best results. 

STEP 4: Frying

At reaching this stage the seeds will make black or coffee colour exterior. The seeds will look like makhana that we eat.
